These grilled chicken tacos are a vibrant, high-protein meal that brings the bold flavours of Mexican street food into your kitchen. By using boneless chicken thighs instead of breast, the meat remains incredibly succulent and stands up well to the high heat of the grill. The combination of earthy crushed cumin and charred onions provides a deeply savoury base that pairs beautifully with the brightness of fresh lime and radishes.
This recipe is an excellent choice for a healthy midweek dinner or a relaxed weekend gathering with friends. The inclusion of heart-healthy avocados and nutrient-dense radishes adds a refreshing crunch to every bite. Serve these tacos family-style in the middle of the table, allowing everyone to customise their own with plenty of tangy tomatillo salsa verde and fresh coriander.
