Pasta with 15-Minute Burst Cherry Tomato Sauce

This vibrant burst cherry tomato pasta is the ultimate solution for a quick and nutritious midweek meal. By cooking the tomatoes over a high heat until they pop, you create a sweet, silky sauce that coats the noodles perfectly without the need for hours of simmering. The combination of fruity olive oil, aromatic garlic and fresh basil provides a classic Mediterranean flavour profile that feels both light and deeply satisfying.

As a high-protein vegetarian option, this dish is particularly versatile and can be adapted with wholewheat pasta for extra fibre or topped with pine nuts for added crunch. It is an excellent choice for a speedy family dinner or a fresh summer lunch when cherry tomatoes are at their seasonal best. Finish with plenty of freshly grated Parmesan to bring a salty, savoury depth to the sweetness of the sauce.

Ingredients for Pasta with 15-Minute Burst Cherry Tomato Sauce

  • 450g pasta

  • Kosher salt

  • 120ml olive oil

  • 2 large garlic cloves, finely chopped

  • 1700ml cherry tomatoes

  • 1/2 teaspoons freshly ground black pepper

  • Pinch of sugar

  • 1 cup coarsely chopped fresh basil

  • Freshly grated Parmesan (for serving)

Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.

Meanwhile, heat oil in a 12" skillet or wide heavy saucepan over medium-high. Add garlic, then tomatoes, pepper, sugar, and 1 teaspoon salt. Cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, 6–8 minutes.

Toss pasta with tomato sauce and basil. Top with Parmesan.
