Plum Tomatoes and Artichokes with Penne

This Mediterranean-inspired penne with plum tomatoes and artichokes is a vibrant addition to our high-protein collection. By using the seasoned oil from the marinated artichoke hearts to sauté the onions and garlic, the dish develops a deep, complex flavour profile with very little effort. The slow-simmered tomato sauce, infused with dried herbs and a hint of red pepper flakes, creates a rich and silky base that coats the pasta perfectly.

A brilliant option for a satisfying lunch or a nourishing dinner, this recipe relies largely on store-cupboard staples like tinned tomatoes and artichokes. It is naturally high in fibre and provides a healthy, meat-free protein boost that will keep you full for longer. Serve in warmed shallow bowls with a final scattering of fresh parsley for a simple yet sophisticated homemade meal.

How to make Plum Tomatoes and Artichokes with Penne

  1. Drain the artichokes, reserving the oil, and halve them lengthwise.

  2. Place 45ml of the artichoke oil marinade in a heavy pot. Add the onions and stir over low heat for 10 minutes, adding the garlic during the last 2 minutes. Stir in the tomatoes, tomato paste, basil, oregano, and red-pepper flakes. Season with salt and freshly ground black pepper. Simmer, uncovered, for 45 minutes.

  3. Add the reserved artichoke hearts with the remaining oil marinade and stir while simmering for 20 minutes. Stir in the parsley and adjust the seasonings. Serve in shallow bowls over cooked penne.
