Rich Little Po'boy

This rich roast beef and Brie po'boy offers a sophisticated twist on the classic Louisiana submarine sandwich. By charring ripe tomatoes under the grill and pairing them with creamy melted cheese, this high-protein dish elevates simple ingredients into a gourmet lunch. The combination of rare beef and indulgent Brie creates a deeply savoury flavour profile that is perfectly balanced by the sweetness of the softened tomatoes and the crisp texture of fresh lettuce.

Ideal for a substantial weekend lunch or a high-protein meal on the go, this sandwich is best served wrapped tightly in foil to allow the warm flavours to meld. Using a high-quality loaf with a crisp crust ensures the bread holds up against the juicy tomatoes and creamy dressing. It is a comforting yet refined choice for anyone seeking a filling, homemade alternative to standard bistro fare.

Ingredients for Rich Little Po'boy

  • 3 small ripe tomatoes, halved

  • Salt and freshly ground black pepper, to taste

  • 1 Italian bread (12 inches long)

  • 60ml mayonnaise

  • 110g thinly sliced rare roast beef

  • 4 thin slices ripe Brie cheese

  • 4 to 6 lettuce leaves, rinsed and patted dry

How to make Rich Little Po'boy

  1. Preheat a grill or grill; set the rack 3 inches from the heat source.

  2. Grill or grill the skin side of the tomatoes until slightly charred (15 minutes on the grill, 8 minutes under the grill). Sprinkle with salt and pepper. Set aside.

  3. Halve the bread lengthwise and pull out some of the insides. Spread the mayonnaise on the bread. Arrange the roast beef evenly over the bottom half and lay the Brie diagonally over the meat. Top with the lettuce.

  4. Place the tomatoes on the top half of the bread and mash them slightly with a fork. Invert the top over the bottom half of the sandwich, cut it in half crosswise and wrap well for the road.
