This hearty prawn, chicken and andouille gumbo is a spectacular example of Cajun-inspired comfort food. Built on a deeply flavoured, dark reddish-brown roux, this dish combines the smoky heat of spicy sausage with succulent chicken thighs and sweet king prawns. The addition of okra and diced tomatoes provides a thick, velvety texture, while a splash of white wine and clam juice adds a sophisticated depth of flavour that balances the earthy spices.
As a high-protein main course, this recipe is ideal for feeding a large crowd or for batch-cooking ahead of a busy week. The base actually improves if made a day or two in advance, allowing the complex flavours of the cayenne, thyme and bay leaves to meld beautifully. Serve generous ladles over a bed of fluffy steamed rice with a sprinkle of fresh parsley for a satisfying, homemade meal.
