Prawns Salad Rolls

This high-protein prawn salad roll recipe is an elegant take on a seaside classic, offering a sophisticated blend of succulent seafood and fresh herbs. The combination of sweet king prawns and a creamy tarragon dressing creates a bright, citrussy flavour profile that is far superior to standard shop-bought sandwich fillings. Using fresh lemon juice and fragrant tarragon adds a refined touch to the mayonnaise base, while the addition of celery provides a necessary and satisfying crunch.

Perfect for a weekend lunch or an alfresco dinner, these rolls are as versatile as they are delicious. For the best results, use top-split brioche rolls toasted with a little butter to contrast the chilled, savoury filling. This dish is an excellent source of lean protein, making it an ideal choice for those looking for a nutritious yet indulgent-feeling meal that can be prepared well in advance of serving.

  • 1.8kg large prawns in shell (21 to 25 per lb)

  • 350ml mayonnaise

  • 45ml fresh lemon juice

  • 45ml chopped fresh tarragon, or to taste

  • 3/4 teaspoons salt

  • 3/4 teaspoons black pepper

How to make Prawns Salad Rolls

Cook half of prawns in a 5- to 6-quart pot of generously salted (2 tablespoons ) boiling water, stirring occasionally, until prawns are just cooked through, 3 to 4 minutes. Transfer prawns with a slotted spoon to a platter and return water to a boil. Cook remaining prawns in same manner (then discard water), transferring to platter. When prawns are cool enough to handle, peel, then chill, covered, until completely cold, about 1 hour.

Whisk together mayonnaise, lemon juice, tarragon, salt, and pepper in a large bowl and chill until ready to use.

Devein prawns and cut into 1/2-inch pieces. Season with salt and pepper, then add to dressing along with celery, and toss to combine. Serve salad in rolls.
