Smoked Salmon Toast with Pickled Tomatoes and Dill

This elegant smoked salmon toast with pickled tomatoes and dill offers a sophisticated twist on a classic brunch favourite. The recipe pairs the rich, savoury notes of cold-smoked salmon with the sharp crunch of home-pickled green tomatoes, all balanced by a cooling dill-infused crème fraîche. Using pumpernickel bread provides a sturdy, earthy base that complements the vibrant toppings perfectly, making every bite both textured and refreshing.

As a high-protein breakfast or light lunch, this restorative dish is as nutritious as it is flavourful. The quick-pickling method adds an acidic brightness that cuts through the richness of the oily fish, while the fresh herbs provide an aromatic finish. It is an ideal choice for a weekend gathering or a nutrient-dense midweek treat that feels truly special.
