This hearty high-protein bean stew offers a playful and flavourful twist on classic comfort food. By combining four varieties of beans with salty cubed ham and a trio of vibrant peppers, this dish creates a satisfying texture that works beautifully as a main course or a substantial side. The secret lies in the unique sweet and savoury glaze, which uses cola and lemon-lime soda to provide a deep, caramelised base that complements the warmth of the curry powder and cayenne pepper.
Perfect for batch cooking or a casual weekend lunch, this versatile recipe is as easy to prepare as it is nutritious. The combination of fibre-rich pulses and lean protein makes it an excellent choice for those seeking a filling, energy-boosting meal. Serve it simply in deep bowls, perhaps with a dollop of soured cream or a slice of crusty bread to soak up the rich, spiced sauce.
