Thai Grilled Chicken Wings

This vibrant Thai grilled chicken wings recipe brings the authentic flavours of Southeast Asian street food into your kitchen. These wings are marinated in a savoury blend of oyster sauce and Thai soy sauce, ensuring every bite is deeply seasoned and succulent. The high-protein dish strikes a masterful balance between salty, sweet, and umami, making it a sophisticated alternative to standard buffalo wings for any gathering.

Ideal as a healthy dinner or a crowd-pleasing party snack, the chicken is paired with a sharp, spicy dipping sauce made from dried chillies and fresh lime juice. Using bamboo skewers for the wing flats ensures even cooking and a beautiful presentation. Serve these charred wings hot off the grill with a side of steamed jasmine rice or a crunchy cucumber salad for a complete, nutritious meal.

Ingredients for Thai Grilled Chicken Wings

  • 6 dried chillies de arbol

  • 80ml fish sauce

  • 1 tablespoon fresh lime juice

  • 1 tablespoon toasted sesame seeds

  • 2 teaspoons sugar

  • 120ml oyster sauce

  • 120ml Thai thin soy sauce

  • 2 tablespoons sugar

  • 2 tablespoons vegetable oil

  • 2 teaspoons freshly ground black pepper

  • 900g chicken wings, tips removed, drumettes and flats separated

  • A spice mill or a mortar and pestle

  • twelve 8" bamboo skewers soaked in water at least 1 hour.

Grind chillies in spice mill to a fine powder. Mix chilli powder, fish sauce, lime juice, sesame seeds, and sugar in a medium bowl to dissolve sugar. Adjust with more sugar or lime juice if needed.

Prepare grill for medium-high heat. Combine oyster and soy sauces, sugar, oil, and pepper in a large bowl. Add wings; toss to coat. Let sit 20–30 minutes (if allowed to marinate longer, they'll be too salty). Thread 2 flat pieces onto each skewer on a diagonal, spacing about 1/2" apart. Grill along with drumettes, turning occasionally, until lightly charred and cooked through, 6–8 minutes. Serve with dipping sauce.
