Tofu-and-Meat Loaf

This high-protein tofu and meatloaf is a clever twist on a classic comfort food favourite. By blending extra-firm tofu with lean minced beef and turkey, you create a dish that is exceptionally moist and satisfying while remaining lighter than a traditional all-meat version. The addition of aromatic ginger, garlic, and a savoury hoisin glaze provides a delicious umami depth that complements the savoury proteins perfectly.

Ideal for a nutritious mid-week meal, this versatile loaf provides a boost of plant-based and animal proteins in every slice. Freezing and thawing the tofu beforehand is the secret to achieving a firm, meaty texture that holds together beautifully once baked. Serve it alongside steamed seasonal greens or a crisp salad for a balanced, heart-healthy dinner that the whole family will enjoy.
