Warm Chicken Sandwiches with Mushrooms, Spinach and Cheese

These warm chicken sandwiches are a sophisticated take on the classic melt, combining earthy mushrooms and fresh baby spinach with the mild, nutty profile of Fontina cheese. Using a shop-bought roast chicken makes this high-protein meal incredibly easy to assemble, while the toasted ciabatta provides a satisfying crunch that contrasts beautifully with the tender filling.

Ideal for a quick weeknight supper or a substantial weekend lunch, this recipe is as nourishing as it is comforting. Wrapping the rolls in foil before baking ensures the cheese melts perfectly into the chicken and vegetables without the bread becoming too hard. Serve these savoury ciabatta melts alongside a crisp green salad or a light soup for a well-balanced, homemade meal.
