Ingredients for Rosemary Agrodolce
60 ml honey
15 g finely chopped rosemary
kosher salt (to taste)
15 ml apple cider vinegar
40 g red onion, thinly sliced
How to make Rosemary Agrodolce
Combine honey, rosemary, and 30 ml of water in a small saucepan over medium heat. Season with salt.
Bring the mixture to a simmer, stirring to dissolve the honey, then cook for about 2 minutes, swirling the pan occasionally, until slightly thickened and fragrant.
Stir in the vinegar and cook for an additional minute to allow some of the vinegar to evaporate.
Remove the pan from the heat and stir in the onion. Allow it to cool in the pan.
Do ahead: The agrodolce can be prepared up to 1 week in advance. Let it cool, then cover and chill. Bring it back to room temperature and stir to combine before using.
