This vibrant asparagus salad with sweet balsamic vinegar is a celebration of seasonal flavours and textures. By reducing the balsamic vinegar on the hob, you create a thick, syrupy glaze that perfectly coats the tender-crisp asparagus spears. The addition of diced red pepper adds a splash of colour and a subtle sweetness, while toasted pecans provide a satisfying crunch that elevates the dish to something truly special.
As a versatile vegan side dish, this salad is an excellent choice for a light lunch or as an elegant accompaniment to a more substantial main course. It is naturally gluten-free and packed with nutrients, making it a healthy addition to any meal. Serve it at room temperature to allow the savoury garlic and herb dressing to fully develop.
