This vibrant avocado and lime sauce vierge is a contemporary, vegan twist on the classic French dressing. By replacing traditional tomatoes with creamy avocado and adding a hint of heat from jalapeño, this sauce offers a wonderful contrast of textures. The addition of fresh lime pulp provides bursts of bright acidity that cut through the richness of the extra-virgin olive oil and shallots.
Perfect for a light summer lunch or a sophisticated dinner party, this versatile condiment pairs beautifully with grilled courgettes, roasted cauliflower, or even as a fresh topping for tacos. It is a heart-healthy choice packed with good fats and fresh herbs, making it an excellent addition to your repertoire of quick, shop-bought-free dressings that can be prepared well in advance.
