Celery, Apple, and Fennel Slaw

This vibrant celery, apple, and fennel slaw is a refreshing departure from traditional mayonnaise-based salads. Combining the peppery crunch of fresh celery with the delicate aniseed notes of fennel and the sharp sweetness of julienned apple, it offers a sophisticated balance of flavours. The dressing, a simple whisk of extra-virgin olive oil and apple cider vinegar infused with fresh tarragon, provides a bright, herbaceous finish that ties the crisp elements together.

As a versatile vegan side dish, this slaw is an excellent accompaniment to grilled proteins or as a crunchy topping for plant-based burgers and tacos. It is naturally light, healthy, and quick to prepare, making it an ideal choice for a midweek lunch or a summer barbecue. For the best texture, serve it immediately to enjoy the contrast between the firm fruit and tender greens.
