Ingredients for Better than celery juice
3 granny smith apples, scrubbed, coarsely chopped
½ bunch parsley, coarsely chopped (leaves and stems)
5 celery stalks, with leaves attached, coarsely chopped, plus more for serving
60 ml apple cider vinegar
pinch of kosher salt
1.25 ml freshly ground black pepper, plus more for serving
How to make Better than celery juice
Purée the apples, parsley, and 5 celery stalks with 750 ml of water in batches using a blender.
Strain the mixture through a fine-mesh sieve into a pitcher, gently pressing with a spoon to extract as much liquid as possible. Alternatively, juice the apples, parsley, and celery before mixing with the remaining water.
Stir in the vinegar, salt, and ¼ tsp pepper, then add additional chopped celery stalks as desired.
To serve, pour 120 ml of the juice into an ice-filled glass and sprinkle with pepper.
