This vibrant celeriac and celery salad is a celebration of crisp textures and clean, botanical flavours. By using both the earthy root and the crunchy stalks, this vegan dish creates a sophisticated contrast that is elevated by a punchy dressing of lemon, salty capers and plenty of fresh flat-leaf parsley. It is a light, fragrant side dish that brings a sophisticated edge to any dinner table, particularly during the cooler months when root vegetables are at their best.
Quick to assemble and naturally healthy, this salad is an excellent accompaniment to roasted vegetables or as a refreshing palate cleanser alongside a main course. Using a mandoline ensures the vegetables are delicate enough to absorb the citrus dressing while maintaining their characteristic bite. It is a simple yet elegant way to make the most of seasonal produce with minimal effort.
