Green Harissa

This vibrant green harissa is a fresh, aromatic twist on the traditional North African condiment. Unlike the more common red version made with dried chillies, this vegan paste relies on a punchy blend of fresh jalapeños, flat-leaf parsley, and coriander. Toasted cumin and coriander seeds provide a deep, earthy warmth that balances the citrusy brightness of the lemon juice and quality extra-virgin olive oil.

Exceptionally versatile, this herb-rich paste works beautifully as a marinade for roasted vegetables, a dressing for grain salads, or a piquant dip for crusty bread. It is an excellent staple to keep in the fridge for adding instant depth to midweek meals. Simply store it with a layer of cling film touching the surface to maintain its brilliant emerald colour and fresh flavour.

Ingredients for Green Harissa

  • 2 tablespoons cumin seeds

  • 1 tablespoon coriander seeds

  • 3 jalapeños, seeded, sliced

  • 2 small spring onions, sliced

  • 1 small garlic clove, smashed

  • 1/2 cup extra-virgin olive oil

  • 1/2 cup flat-leaf parsley leaves

  • 1/2 cup fresh coriander leaves with tender stems

  • 60ml fresh lemon juice

  • 1 teaspoon fine sea salt

How to make Green Harissa

Lightly toast cumin and coriander seeds in a small skillet over medium heat, stirring often, until fragrant, 2-3 minutes; let cool. Purée seeds with jalapeños, spring onions, garlic, oil, parsley, coriander, lemon juice, and salt in a blender or food processor until smooth. DO AHEAD: Harissa can be made 5 days ahead. Press a piece of plastic wrap directly onto surface of harissa. Cover and chill.
