This vibrant kaleslaw offers a nutritious and colourful twist on the traditional cabbage-based side dish. By combining earthy kale with naturally sweet carrots and crisp peppers, it creates a fresh, vegan-friendly salad that provides a satisfying crunch. The deep green leaves of the kale hold up beautifully against the creamy dressing, ensuring the salad remains crisp rather than wilted, making it an excellent choice for meal prep or gatherings.
Whether you are serving this at a summer barbecue or using it to add texture to a midweek wrap, this versatile dish is remarkably simple to prepare. Using a food processor makes light work of the shredding, allowing the flavours to meld during a short rest in the fridge. It is a brilliant way to incorporate more nutrient-dense greens into your daily diet while enjoying a classic flavour profile.
