Orange and Endive Salad with Maple Chipotle Vinaigrette

This vibrant orange and endive salad is a sophisticated vegan starter that perfectly balances bitter, sweet, and smoky flavours. The crisp, pale leaves of Belgian endive provide a refreshing crunch against the juicy sweetness of navel oranges, making it an ideal choice for a light lunch or a stylish dinner party course. The citrus notes are beautifully elevated by a unique dressing that brings together the depth of maple syrup with the subtle heat of chipotle chillies.

Packed with vitamin C and refreshing textures, this healthy salad is as nutritious as it is beautiful to serve. The maple chipotle vinaigrette offers a contemporary twist on classic dressings, using cupboard staples like Sherry vinegar and olive oil to create a rich, multi-layered finish. Serve this dish as a stand-alone appetiser or as a bright accompaniment to roasted seasonal vegetables.
