This vibrant chimichurri is a versatile vegan condiment that brings a burst of fresh, zesty flavour to any dish. Traditionally served with grilled meats, this punchy herb sauce is equally delicious drizzled over roasted vegetables, used as a marinade for tofu, or even stirred through a warm potato salad. The combination of flat-leaf parsley, finely diced onion and robust extra-virgin olive oil creates a coarse, savoury texture that is far superior to any shop-bought alternative.
Quick to prepare and naturally gluten-free, this homemade sauce relies on the quality of its fresh ingredients and a subtle kick from red pepper flakes. It is a fantastic addition to a weekend barbecue or a simple midweek dinner, offering a refreshing acidity from the red wine vinegar that cuts through rich flavours beautifully. For the best results, prepare it a little in advance to let the garlic and oregano fully infuse the oil.
