This vibrant tropical fruit salad is a refreshing vegan dessert that brings together the bright, sun-soaked flavours of pineapple, mango, and sweet honeydew melon. Unlike a standard fruit cocktail, this recipe gains a sophisticated edge from the addition of spicy crystallised ginger and a hint of red pepper for subtle warmth. The combination of fresh lime juice and honey creates a light syrup that enhances the natural sweetness of the fruit while tying the aromatic herbs together.
Perfect as a light palate cleanser or a healthy summer pudding, this dish is as beautiful as it is delicious when served in elegant glassware. The fresh basil and mint provide a cool, savoury contrast to the tropical notes, making it an ideal choice for outdoor dining or a sophisticated brunch. For the best results, use ripe, seasonal fruit and allow the flavours to marry briefly before serving with a final flourish of toasted sesame seeds.
