This shaved beetroot and bitter greens salad is a vibrant celebration of texture and bold, sophisticated flavours. The earthy sweetness of the thinly sliced raw beetroot provides a beautiful contrast to the sharp, peppery notes of the frisée, radicchio, and escarole. It is a visually stunning vegan dish that brings a touch of elegance to any dinner table, whether served as a refreshing starter or a light lunch.
Rooted in seasonal eating, this healthy salad is tied together by a punchy garlic and balsamic vinaigrette that cuts through the bitterness of the leaves. High in antioxidants and naturally gluten-free, it is a fantastic choice for those seeking a nutritious, shop-bought alternative that looks as good as it tastes. Serve it alongside some crusty sourdough for a satisfying plant-based meal.
