This vibrant green tahini sauce is a versatile addition to any plant-based repertoire, offering a fresh Twist on a classic Middle Eastern staple. By blending rich sesame paste with generous handfuls of fresh coriander and flat-leaf parsley, you create a bright, herbaceous dressing that is elevated by the earthy warmth of ground cumin and fenugreek. It is a brilliant way to add a punch of savoury flavour and a burst of colour to your weekly meal prep.
As a naturally vegan condiment, this sauce is exceptionally creamy without the need for dairy, reaching a silky consistency that mimics soured cream. It works beautifully as a dip for crunchy crudités, a dressing for roasted cauliflower, or drizzled generously over falafel and warm flatbreads. Keep a jar in the fridge to instantly brighten up grain bowls and seasonal salads.
