This vibrant spicy tomato salsa is a staple vegan dip that brings a burst of fresh flavour to any meal. By lightly poaching the tomatoes and garlic, you mellow the raw edges of the aromatics, creating a smooth and sophisticated base. The combination of fresh jalapeños and dried arbol chillies provides a multi-layered heat that balances perfectly against the acidity of the lime juice and the brightness of the fresh coriander.
Ideal for hosting or as a healthy snack, this homemade salsa is far superior to shop-bought versions. The inclusion of rinsed red onion adds a mild crunch and sweetness without overpowering the other ingredients. Serve it alongside crunchy tortilla chips, or use it as a zesty topping for grilled vegetables and bean tacos.
