This vibrant sweet and spicy slaw offers a refreshing twist on a classic side dish. By swapping traditional mayonnaise for a bright, zingy dressing made with peach nectar and apple cider vinegar, this vegan recipe achieves a perfect balance of fruitiness and heat. The combination of cayenne and hot sauce provides a gentle warmth that builds beautifully against the crisp, cool texture of the thinly sliced cabbage.
Ideal for summer entertaining, this versatile salad is a fantastic accompaniment to plant-based burgers or smoky grilled vegetables. It is best prepared a little in advance, allowing the cabbage to soften slightly as it marinates in the spiced dressing. For a stress-free gathering, you can even whisk the flavourful dressing together a day ahead and store it in the fridge until you are ready to assemble.
