Tomatillo-Pepita Gazpacho

This vibrant tomatillo and pepita gazpacho offers a zesty, contemporary twist on the classic chilled Spanish soup. By lightly charring the tomatillos and poblano chilli on the grill, you introduce a sophisticated smoky depth that balances the bright, tangy notes of the fruit. The addition of finely ground pumpkin seeds, or pepitas, creates a wonderful richness and a subtly creamy texture without the need for dairy.

As a refreshing vegan starter or a light summer lunch, this dish is packed with healthy fats from avocado and a fresh crunch from diced cucumber and cherry tomatoes. It is a fantastic make-ahead option for warm evenings, as the flavours develop beautifully while chilling in the fridge. Serve it with a crusty sourdough or simply on its own for a nutritious, plant-based meal.
