Tomato and Tomatillo Gazpacho

This vibrant tomato and tomatillo gazpacho is a refreshing twist on the classic Spanish chilled soup. By combining juicy red tomatoes with the zesty, citrus-like notes of fresh tomatillos, this recipe creates a complex flavour profile that is both cooling and deeply savoury. The addition of serrano chilli provides a gentle warmth, while the red-wine vinegar and fresh coriander bring a bright, herbaceous finish to every spoonful.

As a naturally vegan and low-calorie dish, this soup is an excellent choice for a light summer lunch or an elegant dinner party starter. Preparing the base in advance allows the ingredients to meld, resulting in a more developed taste. Serve it thoroughly chilled in glass bowls to showcase the beautiful flecks of fresh herbs and diced vegetables.
