This vibrant vegan dish celebrate the simple beauty of seasonal produce, pairing juicy heirloom tomatoes with a fragrant, homemade infusion. The key to the recipe is the aromatic oil, where fennel seeds and chilli flakes are gently heated to release their warmth and earthy undertones. As the oil takes on a beautiful sunset hue, it develops a complex flavour profile that perfectly cuts through the natural sweetness of the ripened fruit.
Ideal as a sophisticated starter or a refreshing side at a summer barbecue, these tomatoes in chilli-fennel oil are best served with crusty sourdough to mop up the juices. Using a variety of heritage tomatoes adds a wonderful contrast in colour and texture to your table, making this a healthy yet indulgent addition to any plant-based menu.

2 tablespoons crushed red pepper flakes
1 tablespoon fennel seeds
1.4kg large tomatoes, preferably heirloom, sliced into 1/4"-thick rounds
1 tablespoon (or more) red wine vinegar

How to make Tomatoes in Chilli-Fennel Oil
Cook oil, red pepper flakes, and fennel seeds in a small saucepan over medium-low heat, stirring occasionally, until oil around spices is sizzling, about 5 minutes. Reduce heat to low and continue to cook until oil is infused with flavour and rusty-orange in colour, 20–30 minutes. Let cool.
Arrange tomatoes on a large platter and drizzle with vinegar, then chilli-fennel oil. Season with more vinegar if desired and sprinkle with salt.
