This white bean and pasta soup is a nourishing, plant-based take on the classic Italian pasta e fagioli. It is a hearty vegan dish that relies on simple store-cupboard staples like cannellini beans and small pasta shapes to create a deeply satisfying texture. By simmering the vegetables slowly with the bean cooking liquor and fresh tomatoes, you achieve a rich, savoury broth that feels indulgent despite its healthy profile.
Ideal for a quick midweek dinner or a batch-cook lunch, this comforting soup is packed with fibre and plant-based protein. The addition of fresh spring onions and a final drizzle of quality extra-virgin olive oil provides a bright, peppery finish. Serve it alongside some crusty sourdough bread for a complete, warming meal that the whole family will enjoy.
