This vibrant rocket salad with olives, pancetta and Parmesan shavings is a masterclass in balancing bold flavours. The peppery bite of fresh rocket leaves provides a bright base for the saltiness of the Kalamata olives and the umami richness of the Italian bacon. Finished with a simple lemon and extra-virgin olive oil dressing, it is a sophisticated dish that celebrates high-quality Mediterranean ingredients without the need for complex preparation.
Served as a light starter or a quick lunch, this gluten-free salad is an excellent choice for effortless entertaining. Although the recipe traditionally features crispy pancetta, it can easily be adapted for vegetarians by omitting the meat and adding extra toasted pine nuts for crunch. Pair it with some crusty sourdough bread to mop up the citrusy charcoal-flecked dressing for a truly satisfying meal.
