This elegant asparagus and goat's cheese frittata is a clever vegetarian dish that makes brilliant use of a rice cooker for a perfectly even, gentle bake. The combination of tender seasonal asparagus and the tangy richness of goat's cheese creates a sophisticated flavour profile that is balanced by a subtle hint of heat from the Tabasco. It is a light yet satisfying meal that works beautifully for a quick weekday lunch or as a centrepiece for a relaxed weekend brunch.
Using the rice cooker ensures a foolproof texture, resulting in a soft, custardy finish that is often difficult to achieve in a traditional frying pan. Packed with protein and fresh greens, this healthy homemade frittata is wonderful served warm with a crisp side salad or enjoyed at room temperature for a simple crustless quiche alternative.

Ingredients for Asparagus and Goat Cheese Frittata
1 tablespoon olive oil
1 tablespoon spring onion or spring onion, white part only, finely chopped
230g asparagus, trimmed and cut into 1/2-in/12-mm pieces
4 large eggs
80ml double cream
1 teaspoon salt
1/4 teaspoons Tabasco sauce
120ml crumbled goat cheese
How to make Asparagus and Goat Cheese Frittata
Back to contentsSet a medium rice cooker to the regular cycle or to quick cook if it's a fuzzy-logic machine. Heat the olive oil and sauté the spring onion for 1 minute. Add the asparagus and cook for another 3 minutes, or until the asparagus begins to soften. In a medium mixing bowl, whisk together the eggs, cream, salt, and Tabasco. Pour the egg mixture over the asparagus and sprinkle with the goat cheese.
Cover the rice cooker and reset to the regular cycle. The frittata will take 3 to 4 minutes to cook. Allow it to continue steaming, covered, for an additional 6 minutes on the keep-warm setting or with the machine turned off. (Many rice cookers, including all fuzzy-logic machines, do this automatically.) Serve warm or at room temperature.
