This vibrant avocado cream is a sophisticated twist on traditional guacamole, offering a silky, aerated texture that feels wonderfully indulgent. The addition of tangy soured cream and sharp apple cider vinegar cuts through the richness of the ripe avocado, while fresh coriander and fennel fronds provide a fragrant, aniseed-infused finish. It is an excellent vegetarian option for those seeking a quick and colourful addition to a summer spread or a relaxed weekend lunch.
Ideal for entertaining, this versatile dip pairs perfectly with salty tortilla crisps or crunchy crudités. Because it uses a food processor to achieve such a light and airy consistency, it takes mere minutes to prepare. Beyond dipping, you can also use this savoury cream as a cooling topping for spicy tacos or as a nutritious spread for toasted sourdough.
