Baked Eggs with Tomato

This classic vegetarian dish of baked eggs with tomato is a sophisticated yet simple choice for a weekend brunch or a light lunch. By gently simmering fresh tomatoes with garlic and flat-leaf parsley, you create a vibrant, savoury base that perfectly complements the richness of a soft-set egg. The addition of a tiny pinch of caster sugar helps to balance the acidity of the fruit, resulting in a beautifully rounded flavour profile.

Quick to prepare and elegant to serve, these individual ramekins make for a wonderful homemade starter or a protein-rich recovery meal. For the best results, ensure your eggs are at room temperature before baking and serve promptly with buttery toast fingers for dipping into the golden yolks.
