Burricotti with Chestnut Honey and Candied Spicy Walnuts

This sophisticated vegetarian starter brings together a beautiful balance of bitter, sweet, and savoury notes. The star of the dish is burricotti—a luxurious blend of creamy ricotta and buttery burrata—which pairs perfectly with the deep, slightly smoky flavour of chestnut honey and the crunch of spiced nuts. It is an elegant assembly that feels contemporary and refined, yet requires very little time at the stove.

Served on wholesome whole wheat crackers, these bites are excellent for autumnal entertaining or as a light lunch accompaniment. The radicchio is briefly wilted in balsamic vinegar to soften its bite, providing a vibrant purple base for the rich cheese. It is a wonderful example of how high-quality, shop-bought ingredients can be combined to create a restaurant-standard appetiser with ease.
