This vibrant vegetarian side dish brings a refreshing lift to the humble butter bean. By combining the rich, creamy texture of the beans with a sharp citrus dressing and aromatic herbs, you create a plate that feels both comforting and light. The acidity of the lime cuts through the butter beautifully, making it an excellent partner for grilled halloumi or as part of a seasonal mezze spread.
Quick to prepare using either fresh or frozen beans, this recipe is a reliable choice for busy weeknights when you want maximum flavour with minimal effort. It is naturally high in fibre and packed with bright, zingy notes that celebrate simple ingredients. Serve it warm to ensure the mint remains fragrant and the citrus notes stay sharp and punchy.

How to make Butter Beans with Butter, Mint, and Lime
Back to contentsIn a medium saucepan, bring 1450ml water and 1 tablespoon salt to a boil over high heat. Add butter beans and cook until tender, 9-12 minutes, depending on the size of the beans. Drain in a colander; shake colander several times to shed as much water as possible.
Put butter in a large serving bowl, and pour warm butter beans on top. Toss beans with butter until all the butter is melted. Add lime juice and toss again to distribute. Fold in mint, season with salt and pepper, and scatter lime zest over the top. Serve immediately.
