Campanelle with Tomatoes and Feta

This vibrant campanelle with tomatoes and feta is a wonderful choice for a quick midweek meal that celebrates fresh, Mediterranean flavours. The combination of sweet, blistered cherry tomatoes and peppery rocket creates a light yet deeply satisfying sauce that coats the elegant, trumpet-shaped pasta perfectly. By sautéing the tomatoes over a high heat, they release their juices to form a rustic dressing that is both sweet and savoury.

As a versatile vegetarian dish, it is perfect for busy evenings when you want a nutritious, homemade dinner without spending hours in the kitchen. The addition of crumbled feta adds a creamy, salty finish that balances the acidity of the tomatoes. Serve this simple pasta on its own or with a side of crusty garlic bread for a comforting and healthy family supper.
