This cardamom ambrosia salad offers a sophisticated, modern update to the classic fruit salad. By pairing zesty orange and grapefruit suprêmes with tropical mango and crisp Anjou pears, it creates a vibrant base that balances sweetness with acidity. The addition of fresh shredded coconut and slivered almonds provides a satisfying crunch, while the ground cardamom introduces a warm, aromatic depth that lingers beautifully on the palate.
As a unique vegetarian dish, it bridges the gap between a refreshing starter and a decadent side. The creamy blue cheese dressing, lightened with buttermilk and soured cream, adds a bold savoury note that cuts through the juicy fruit. It is an excellent choice for a dinner party or a contemporary weekend brunch, offering a complex flavour profile that feels both indulgent and wholesome.
