This carroty mac and cheese offers a vibrant, nutrient-rich twist on the quintessential comfort food. By incorporating finely grated carrots into the cooking water, the vegetables soften perfectly, blending seamlessly into the sauce to add a subtle sweetness and a boost of colour. The combination of sharp cheddar and tangy soured cream ensures a rich, velvety texture that remains truly satisfying while being slightly lighter than a traditional flour-based roux.
As a wholesome vegetarian main, this dish is an excellent way to introduce more vegetables to family mealtimes without compromising on flavour. The use of whole wheat macaroni adds a pleasant nuttiness and extra fibre, making it a reliable choice for a mid-week supper. Serve it alongside a crisp green salad or some steamed broccoli for a balanced and comforting homemade meal.

How to make Carroty Mac and Cheese
Back to contentsPreheat oven to 204°C and grease an 8-inch square baking pan. Arrange a rack in the top third of the oven.
Cook macaroni according to package instructions in a large pot of salted boiling water; add carrot 3 minutes before pasta is finished cooking; drain well.
While pasta is hot, stir in all but 110g the cheddar and the butter. In a bowl, whisk together the soured cream, milk, eggs, salt, mustard powder, and pepper. Fold mixture into the pasta.
Scrape the mixture into the prepared pan. Sprinkle the remaining cheddar and the parmesan over the top. Bake until the casserole is firm to the touch and golden brown, about 30 minutes.
