Cauliflower, White Bean, and Feta Salad

This vibrant cauliflower, white bean, and feta salad offers a sophisticated blend of textures and bright, zesty flavours. The base of crisp cauliflower florets and sliced Belgian endive provides a satisfying crunch, which contrasts beautifully with the creamy consistency of the protein-rich white beans and salty feta cheese. Infusing the olive oil with fresh rosemary adds a subtle earthy depth that elevates this vegetarian dish beyond a standard seasonal salad.

Perfect as a nutritious light lunch or a refreshing side dish for grilled mains, this recipe is both wholesome and easy to assemble. The lemon and herb dressing provide a sharp, clean finish that cuts through the richness of the cheese. Serve it immediately to enjoy the fresh bite of the vegetables, or allow it to sit for a short while to let the savoury rosemary notes develop further.
