This chilled corn soup is a light and elegant vegetarian dish that celebrates the natural sweetness of fresh summer produce. By simmering the corn cobs along with the kernels, you extract every bit of creamy flavour and golden colour from the veg, resulting in a soup that is deeply satisfying yet remarkably refreshing. It is a sophisticated alternative to traditional gazpacho, offering a velvety texture that feels indulgent while remaining light on the palate.
Ideal for a warm afternoon lunch or as a vibrant starter for a garden party, this recipe is best prepared in advance to allow the flavours to settle as it cools. The addition of tangy soured cream and fresh chives provides a sharp, savoury contrast to the sweet corn. Serve it in chilled bowls for a cooling homemade treat that makes the most of seasonal ingredients.

Ingredients for Chilled Corn Soup
3 ears of corn, shucked
1medium onion, chopped
1 garlic clove, finely chopped
2 tablespoons unsalted butter
4 1/2 cups water
soured cream
chopped chives
How to make Chilled Corn Soup
Cut kernels from cobs with a sharp knife, then cut cobs into thirds.
Cook onion and garlic in butter with 1/4 teaspoons salt in a large heavy saucepan over medium heat, stirring occasionally, until onion is softened, about 5 minutes. Add corn and cobs, water, 1 teaspoon salt, and 1/2 teaspoons pepper and simmer, uncovered, 20 minutes.
Discard cobs, then purée corn mixture in batches in a blender until very smooth (use caution when blending hot liquids). Force soup through a fine-mesh sieve into a bowl, discarding solids.
Chill until cold, at least 1 hour. Thin with water if desired and season with salt.
