This vibrant corn and courgette salad with feta is a celebration of seasonal summer produce. By combining sweet, blanched corn kernels with ribbons of fresh courgette and aromatic herbs, you create a dish that is both light and satisfying. The addition of white wine vinegar and a hint of chilli provides a bright acidity that cuts through the creamy, salty feta, making every mouthful perfectly balanced.
As a versatile vegetarian side, this salad is ideal for outdoor dining or as a refreshing accompaniment to grilled mains. The corn can be prepared a day in advance to save time, making it an excellent choice for stress-free entertaining.
