Creamy Grits with Rosemary Bacon

This recipe for creamy grits with rosemary bacon offers a sophisticated twist on a classic comfort food. The velvety texture of the grits, enriched with whole milk and nutty Parmigiano-Reggiano, provides a luxurious base for the savoury toppings. By roasting the bacon with fresh rosemary, you infuse the meat with an earthy, pine-like aroma that cuts beautifully through the richness of the cheese and butter.

Perfect as a warming weekend brunch or a quick midweek supper, this dish relies on cupboard staples and simple techniques. While grits are traditionally a staple of Southern American cuisine, this version uses quick-cooking varieties and Italian hard cheese to create a fusion of flavours that feels entirely modern. Serve it immediately while the bacon is crisp and the grits are at their smoothest.
