This roasted cauliflower with cumin and pomegranate is a vibrant vegetarian dish that celebrates texture and balance. The nutty, earthy notes of toasted cumin seeds pair perfectly with the caramelised edges of the roasted florets, while the juicy pomegranate seeds provide a bright burst of sweetness. It is a sophisticated way to elevate a humble brassica into a stunning centrepiece or a substantial side dish for a Middle Eastern-inspired feast.
Quick to prepare and naturally healthy, this recipe relies on the contrast between the warm, spiced cauliflower and the cool, salted yoghurt. It is an excellent choice for a light lunch or as part of a shared mezze spread. Serving it with a generous scatter of fresh mint adds a final layer of fragrance that brings all the bold flavours together beautifully.
