This duck egg sandwich with spinach and chipotle cream is a sophisticated take on a classic breakfast roll. By swapping a standard hen’s egg for a rich, creamy duck egg, the dish gains a more indulgent flavour that pairs perfectly with the gentle heat of the adobo sauce. The addition of smoky red peppers and crisp red onions provides a savoury depth that balances the buttery toasted brioche bun.
Ideal as an elevated weekend brunch or a quick vegetarian midweek meal, this recipe is packed with vibrant textures and bold flavours. Using shop-bought smoked peppers makes assembly effortless, while the soured cream adds a cooling element to the spicy chipotle. Serve it immediately to ensure the yolk remains perfectly runny for a truly satisfying finish.
