This vibrant fiesta vegetable wrap is a bright and nourishing option for a quick midweek lunch or a healthy picnic spread. Combining the creamy richness of goat cheese or cream cheese with a punchy basil pesto, it provides a savoury base for crisp English cucumbers and sweet shredded carrots. The addition of ripe avocado offers a buttery texture that makes this vegetarian dish feel indulgent while remaining light and fresh.
Designed for those who need a portable, mess-free meal, this versatile wrap is excellent for office lunchboxes or school bags. Using a spinach or beetroot tortilla adds an extra splash of colour, making the dish as visually appealing as it is delicious. For the best results, assemble the wrap and chill it for half an hour, allowing the tortilla to soften slightly and the flavours to develop before serving.

How to make Fiesta Veggie Wrap
Back to contentsIn a small bowl, mix together the cream cheese and pesto. Spread the cream cheese mixture evenly over the tortilla. Top with the avocado slices, arranging them in a horizontal line across the centre or mashing them onto the surface. Arrange the carrot and cucumber on top of the avocado. Sprinkle with salt and pepper. Press down gently.
Fold about 2 inches (5 cm) of the right side of the tortilla over the filling. Press gently. Beginning with the rounded side closest to you, roll up the tortilla into a tight cylinder, with the filling peeking out the top. Alternatively, roll up the tortilla like you would a burrito, with the filling enclosed in the wrap.
Wrap in foil or a strip of pretty paper and place in an airtight container or sandwich bag and seal tightly. Refrigerate until ready to go.
