Fruit and Nut Pancakes

These fruit and nut pancakes offer a wholesome and satisfying twist on a classic breakfast favourite. By using whole-wheat flour and rolled oats, this vegetarian dish provides a hearty texture that pairs beautifully with the crunch of toasted almonds or walnuts. The addition of mashed banana and a hint of almond extract creates a naturally sweet base, while frozen berries provide a bright burst of colour and tanginess in every bite.

Ideal for a lazy weekend brunch or a nutritious midweek meal, these pancakes are packed with fibre and slow-release energy to keep you feeling full until lunch. The recipe is incredibly versatile, allowing you to swap the nuts or fruit depending on what you have in your kitchen cupboard. Serve them warm with a dollop of Greek yoghurt or a drizzle of honey for a truly delicious homemade treat.
