This grilled corn with herb butter is a quintessential summer side dish, perfect for garden barbecues and outdoor gatherings. By grilling the corn over a medium-high heat, the natural sugars in the kernels caramelise, providing a beautiful smoky sweetness that contrasts perfectly with the savoury, seasoned butter. It is a vibrant vegetarian option that brings a touch of freshness to any grilled spread.
The homemade herb butter, featuring a blend of coriander, chives, and parsley, can be prepared a day in advance to save time during hosting. Simply bring it back to room temperature before spreading it over the steaming cobs. Whether served alongside grilled halloumi or as part of a classic Sunday roast alternative, these buttery cobs are always a crowd-pleaser.
