This grilled panzanella is a smoky, sophisticated twist on the classic Italian bread salad. By charring the spring onions and toasting the bread over a high heat, you introduce a depth of flavour that perfectly complements the juicy grilled tomatoes. The addition of peppery rocket and a sharp red wine vinegar dressing ensures every mouthful is balanced and vibrant, making it an ideal choice for outdoor dining or a rustic weekend lunch.
As a versatile vegetarian dish, this salad works beautifully as a standalone main or served alongside grilled halloumi or roasted vegetables. Rubbing the warm, toasted bread with fresh garlic provides a subtle aroma that permeates the entire dish. It is a fantastic way to use up slightly firm country-style bread, as the crumb soaks up the savoury juices while maintaining a satisfying crunch.
