Grilled Vegetables with Mint Raita

This vibrant recipe for grilled vegetable skewers with mint raita is a fantastic addition to any summer barbecue. By lightly charring red peppers, courgettes and red onions, you bring out their natural sweetness, which provides a lovely contrast to the aromatic garam masala spice. The fresh, cooling raita serves as the perfect accompaniment, adding a creamy texture and a burst of herbal flavour to the plate.

A simple yet impressive vegetarian dish, these skewers are incredibly versatile and easy to prepare ahead of time. While they make a delicious light lunch when served with warm flatbreads, they are also the ideal healthy side dish for spiced meats, particularly tandoori-style lamb or chicken.
